Buford puts himself through the ringer so that we can live vicariously we can learn the tricks to working in the most interesting Italian restaurant in New York. However, Heat is not only a memoir it's also, at times, a tutorial. Who knows what the Babbo kitchen is actually like. Poetic embellishment, I imagine, has a lot to do with the descriptions in Heat. Everyone is so connected, so in rhythm, so well-timed, that every movement seems like an orchestrated dance. An almost spiritual energy enters into the air, or at the very least a sixth sense, that begins to dictate when the pasta should go into the water, when the grilled whole fish needs to be flipped, when the braised dish should be reheated. You have to keep them all straight while you have no time to think. Three pasta recipes start with pancetta, but one moves on to white wine with a pad of butter, the other white wine but with stock instead, and the third olive oil and chili flakes. A mistakes can ruin the highly calibrated rhythm of an entire table's entrees, prepared to arrive simultaneously. The heat, of course, is unbearable- like a shimmering wall when you enter the kitchen. Orders arrive faster than they can be made you are perpetually behind. My favorite passages from Bill Buford's Heat are set in the Babbo kitchen, when he describes with fear and awe the wonder that is a busy restaurant kitchen at dinnertime- tickets flying, steam vaporizing, oil popping.

Not that I always did what I was supposed to do.īut these men were fine when I reached out with my senses to avoid those in great pain, which was surprising, given what they did for a living. To never speak of the gift bestowed upon me by the gods and to never, ever go beyond sensing to actually doing something about it. I was forbidden to do anything but ignore. They projected their agony onto the world around them. There was always someone whose pain cut so deeply, was so raw, that their anguish became a palpable entity I didn’t even have to open my senses to feel-that I couldn’t ignore and walk away from. Doing so without reason felt incredibly invasive, but in crowds, it was difficult to control just how much I allowed myself to feel. Normally, I didn’t prod to see if someone was in pain. I’d…felt nothing from them as I drifted between the crowded tables earlier. I looked up from my cards and across the crimson-painted surface to the three men sitting at the table. “They found Finley this eve, just outside the Blood Forest, dead.” Let me just say that I hate Isae Benesit and will never like her. The plot twists were all super effective and the hard-hitting moments were pretty intense. I was hesitant about the Lazmet death retcon, but it was done really well and added a lot to the story. The themes were great in this, and the pacing was also great. I got my more planets wish and got some awesome visuals along the way (Ogra is my dream aesthetic) We got to see so much more through them than just through Akos and Cyra, and it was greatly appreciated. The inclusion of Eijeh and Cisi's perspectives really added a lot to the story and the world. I had some mixed feelings about the first book, but I entirely loved this one! It was so good! Asteroids, stars, planets, the current stream space debris, ships, fragmented moons, undiscovered worlds this was a place of endless possibility and unfathomable freedom. Space was not a finite container, but that didn't mean it was empty. |
